radish broad beans endive rocket jacket potato 

Here’s a nice recipe using things we seem to have a glut of in the garden at the moment.


8 medium to large radishes

2 large jacket potatoes

300g of rocket, red lettuce and endive (or other mixed salad)

50g of butter

1 onion

2 handfulls of young broad beans

How to…

Wash the broad beans, radishes and leaves. Top and tail the radishes and beans, and cut to desired size. Peel and cut the onion finely.

Cook the potatoes in the microwave on full power for ten minutes, then for ten minutes in the oven @ 200 degrees C.

While the potatoes are in the oven, boil the baby broad beans in a pan half-filled with boiling water for 5 minutes, and fry the onions and radish in half the butter, for 5 minutes on a high heat.

Arrange the leaves on a plate, add a little dressing and plenty of black pepper. Add the potato, the vegetables, and finish off with the rest of the butter smothered all over the jacket. Enjoy!
